Heat oven to 350°F. Line a large cookie sheet with parchment paper.

Scoop 1 tablespoon cottage cheese portions onto sheet, 2 inches apart. Flatten to 1/4 inch with spoon.

Add any optional seasonings on top of flattened cheese.

Cook 40-50 minutes until edges are dark brown and surface is golden to medium brown. Check at 35 minutes.

Let cool completely 20-30 minutes until fully firm and crunchy.
