01 1 x ~30cm/12" Lebanese bread (sub other thin flatbreads)
02 125g / 4 oz chicken mince (ground chicken)
03 2 tsp tomato paste
04 1 tsp Baharat spice mix (Lebanese 7 spice)
05 1/2 tsp sweet paprika (or smoked)
06 1 garlic clove, crushed
07 1/4 tsp cooking salt (halve for table salt)
08 1 tbsp finely chopped parsley or coriander (or sub 1 tsp dried oregano)
09 1 1/2 tbsp extra virgin olive oil (or regular olive oil)
10 Extra virgin olive oil
11 2 tbsp Danish feta or goat cheese, crumbled (or regular feta)
12 Lemon juice, just a light drizzle (optional)
13 Dried chili flakes/red pepper flakes (optional)
14 1 tbsp toasted pine nuts, roughly chopped (or sub pistachios, almonds, sesame seeds)

Instructions

Step 01

Trim Lebanese bread to fit a large 30cm/12" non-stick pan using scissors if necessary.

Step 02

Combine chicken mince, tomato paste, Baharat spice mix, paprika, garlic, salt, parsley (or coriander/oregano), and olive oil in a bowl. Mix thoroughly.

Step 03

Spread the chicken mixture evenly and thinly over one side of the bread. Use all of the mixture.

Step 04

Heat 1 tablespoon of oil in the pan over high heat. Place the bread in, meat side down, and cook for 90 seconds, pressing down lightly to encourage browning. The meat will adhere to the bread.

Step 05

Flip the bread using tongs and cook the bread side for another 90 seconds until golden and crispy. Reduce heat if browning too quickly.

Step 06

Slide finished bread onto a cutting board. Sprinkle with feta, drizzle with olive oil, and add any optional toppings as desired (lemon juice, chili flakes, toasted nuts, or parsley). Cut into 8 pieces and serve.
