Air Fryer Avocado Fries (Print Version)

# Ingredients:

01 - 3 firm, slightly under-ripe avocados.
02 - 1 cup panko breadcrumbs.
03 - 1/2 cup Parmesan cheese, finely grated.
04 - 1/2 teaspoon ground black pepper.
05 - 2 large eggs.
06 - Cooking spray.
07 - Coarse salt (optional).
08 - Fresh lime juice (optional).
09 - 1/2 cup ranch dressing.
10 - 2 tablespoons sriracha sauce.

# Instructions:

01 - Halve avocados and remove pits. Scoop out flesh and slice each half into 5 lengthwise pieces.
02 - Combine panko, Parmesan, and pepper in a bowl. In another bowl, whisk eggs.
03 - Dip each avocado slice in egg, then coat thoroughly with panko mixture.
04 - Spray air fryer basket with cooking spray. Place coated avocado slices in a single layer. Cook at 350°F for 3 minutes, flip, then cook 3 more minutes until golden.
05 - Mix ranch dressing with sriracha in a small bowl.
06 - Let fries cool briefly. Optionally sprinkle with salt and lime juice. Serve immediately with the spicy ranch dip.
