Baked Cod Coconut Cream (Print Version)

# Ingredients:

→ For the Cod

01 - 21 oz (600 grams) cod fillets
02 - Salt, to taste
03 - Black pepper, to taste

→ For the Cream Sauce

04 - 2 tablespoons olive oil
05 - 1 medium onion, thinly sliced
06 - 1 tablespoon grated fresh ginger
07 - 2 garlic cloves, crushed
08 - 1.2 cups (300 milliliters) coconut milk
09 - Juice and zest of 1 large organic lemon

# Instructions:

01 - Preheat your oven to 180°C (350°F) to prepare for baking the cod.
02 - Season the cod fillets with salt and black pepper evenly to enhance their flavor.
03 - In a skillet, heat olive oil over medium heat. Add the sliced onion and sauté until translucent. Stir in grated ginger and crushed garlic, cooking for one minute. Pour in the coconut milk, bring to a gentle simmer, and add the lemon juice and zest, stirring to combine the flavors.
04 - Place the seasoned cod fillets in a single layer in a baking dish. Pour the coconut-lemon cream sauce over the cod. Bake in the preheated oven for 20-25 minutes, or until the cod flakes easily with a fork.
05 - Remove the baked cod from the oven and serve with the sauce drizzled over the top. Pair with rice or vegetables for a complete meal.

# Notes:

01 - Use fillets of uniform thickness (1-1.5 inches) for even cooking. Substitute cod with halibut, haddock, or pollock if needed.
