Combine all spice rub ingredients in a small bowl and mix thoroughly until well integrated.

Pat chicken thighs dry with a paper towel to remove excess moisture. Generously coat all sides of the chicken with the prepared spice rub.

Preheat air fryer or oven to 190°C (375°F).

Place chicken thighs in the preheated air fryer with skin side down and cook for 12 minutes. Flip to skin side up and continue cooking for another 12-14 minutes until chicken reaches proper internal temperature.

Place chicken thighs skin side up on a baking sheet and cook for 25-30 minutes until thoroughly cooked. Do not flip the chicken to maintain crispy skin.

Once the chicken is cooked, either toss thighs in buffalo sauce to fully coat or drizzle sauce over the top according to preference.
