Carrot Apple Salad Highlights (Print Version)

# Ingredients:

01 - 1 red delicious apple, matchstick cut
02 - 1 granny smith apple, matchstick cut
03 - 2 tablespoons lemon juice
04 - 2 cups matchstick carrots
05 - 1/4 cup yellow onion, finely diced
06 - 1/3 cup dried sweetened cranberries
07 - 1/2 cup vanilla yogurt
08 - 1/4 cup mayonnaise
09 - 1 tablespoon sugar
10 - 1/4 teaspoon salt
11 - 1/4 teaspoon pepper
12 - 1 cup canned mandarin segments, drained

# Instructions:

01 - Cut both apples matchstick style and place the pieces in a bowl.
02 - Pour the lemon juice over the apple pieces in the bowl and toss well to coat all of the apples.
03 - Set the bowl aside to let the apples soak up the lemon juice for 5 minutes to prevent browning.
04 - Pour the matchstick carrots into a large mixing bowl and add the diced onion and sweetened dried cranberries.
05 - Once the apples have soaked for at least 5 minutes, add them to the mixing bowl.
06 - Add vanilla yogurt, mayonnaise, sugar, salt, and pepper to the bowl. Stir all ingredients together well.
07 - Add the drained mandarin segments to the bowl and stir them into the salad.
08 - Cover the bowl and refrigerate for at least three hours.
09 - Serve and enjoy!
