Heat a large skillet over medium-high heat. Add the chicken patties and cook for approximately 6 minutes, then flip to cook the other side. Continue cooking until the patties reach an internal temperature of at least 165°F.

Remove the chicken patties from the skillet and transfer them to a cutting board. Cut each patty into 6 strips.

Lay out the tortillas and evenly divide half of the shredded mozzarella cheese, sprinkling it down the center of each tortilla. Place 6 strips of chicken on top of the cheese on each tortilla, then spoon the pizza sauce over the chicken. Add 6 pepperoni slices on top of the sauce for each tortilla. Sprinkle the remaining shredded mozzarella cheese on top.

Fold up the sides of the tortillas to cover the filling.
