Chicken Potato Croquettes (Print Version)

# Ingredients:

→ Main

01 - 4 cups boiled potatoes
02 - 2 cups shredded boiled chicken
03 - ½ cup cheese
04 - salt to taste
05 - 1 teaspoon black pepper

→ Coating

06 - 2 eggs
07 - ½ cup panko breadcrumbs
08 - ½ cup flour

# Instructions:

01 - Cook and shred chicken with seasonings. Boil and mash potatoes.
02 - Combine chicken, potatoes, cheese and seasonings in bowl.
03 - Shape into 3-inch cylinders. Dredge in flour, egg, then breadcrumbs.
04 - Freeze 30 minutes to set coating. Shallow fry 5-7 minutes until golden.

01 - Can use leftover chicken and potatoes
02 - Can make ahead and refrigerate
03 - Keeps 3-5 days refrigerated
