Holiday Candy Cane Cookies (Print Version)

# Ingredients:

01 - 1/2 cup unsalted butter, softened.
02 - 1/2 cup shortening.
03 - 1 cup white sugar.
04 - 3/4 cup brown sugar.
05 - 1 1/2 teaspoon vanilla extract.
06 - 1 teaspoon peppermint extract.
07 - 2 large eggs.
08 - 3 cups all-purpose flour.
09 - 1 teaspoon baking soda.
10 - 1/2 teaspoon salt.
11 - 3/4 cup crushed candy canes.
12 - 1 cup white chocolate chips, plus extra for topping.

# Instructions:

01 - Heat oven to 350°F and line cookie sheets with parchment.
02 - Beat butter, shortening and sugars until fluffy (2 minutes).
03 - Mix in vanilla, peppermint, then eggs one at a time.
04 - Add flour, baking soda and salt on low speed.
05 - Stir in candy canes and white chocolate chips.
06 - Roll dough into 1-1.5 tablespoon balls.
07 - Place 2 inches apart on sheets.
08 - Bake 8-10 minutes until tops look set.
09 - Add extra chips on top while warm.
10 - Cool 10 minutes on sheet, then move to rack.

01 - Can make larger cookies using 3 tablespoons dough.
