Heat oven to 350°F and line cookie sheets with parchment.

Beat butter, shortening and sugars until fluffy (2 minutes).

Mix in vanilla, peppermint, then eggs one at a time.

Add flour, baking soda and salt on low speed.

Stir in candy canes and white chocolate chips.

Roll dough into 1-1.5 tablespoon balls.

Place 2 inches apart on sheets.

Bake 8-10 minutes until tops look set.

Add extra chips on top while warm.
