# Ingredients:

01 - 1 pound cheese-filled tortellini (fresh or refrigerated)
02 - 1 cup all-purpose flour
03 - 2 large eggs
04 - 1 cup Italian-style breadcrumbs
05 - ½ cup grated Parmesan cheese
06 - 1 teaspoon garlic powder
07 - 1 teaspoon dried Italian seasoning
08 - Salt and black pepper, to taste
09 - Vegetable oil, for frying

10 - Marinara sauce for dipping

# Instructions:

01 - Boil tortellini according to package until al dente. Drain and pat dry with paper towels.
02 - Set up three bowls: flour in first, whisked eggs in second, and mix of breadcrumbs, Parmesan, and seasonings in third.
03 - Dredge tortellini in flour, then egg, then breadcrumb mixture, pressing gently to adhere.
04 - Heat oil to 350°F in large skillet. Fry tortellini in batches for 2-3 minutes per side until golden brown.
05 - Drain on paper towels. Sprinkle with extra Parmesan if desired and serve hot with marinara sauce.

01 - Best served immediately while hot and crispy
02 - Use fresh or refrigerated tortellini, not dried
03 - Can be reheated in oven to restore crispiness
