Sauté onion and pepper with 1/2 tablespoon butter until soft. Season with salt and pepper. Transfer to bowl.

Dice and sauté ham with 1/2 tablespoon butter until browned. Transfer to separate bowl.

Whisk eggs, cook in remaining butter over medium heat until just set but still moist. Season with salt and pepper.

Layer eggs, vegetables, cheese, and ham on each tortilla. Fold bottom up, sides in, then roll up.

Wrap each burrito in parchment paper, label, and place in freezer bags for storage.
