Freezer Breakfast Burritos (Print Version)

# Ingredients:

→ Base Ingredients

01 - 8 oz cheddar cheese
02 - 1 yellow onion
03 - 1 bell pepper
04 - 2 tablespoons butter, divided
05 - 1 lb cooked ham
06 - 12 large eggs
07 - 8 large flour tortillas (burrito size)
08 - Salt and pepper to taste

# Instructions:

01 - Shred cheese if needed. Dice onion and bell pepper.
02 - Sauté onion and pepper with 1/2 tablespoon butter until soft. Season with salt and pepper. Transfer to bowl.
03 - Dice and sauté ham with 1/2 tablespoon butter until browned. Transfer to separate bowl.
04 - Whisk eggs, cook in remaining butter over medium heat until just set but still moist. Season with salt and pepper.
05 - Layer eggs, vegetables, cheese, and ham on each tortilla. Fold bottom up, sides in, then roll up.
06 - Wrap each burrito in parchment paper, label, and place in freezer bags for storage.
