Pour heavy cream, crumbled Gorgonzola, salt, and garlic powder into a medium pan. Stir over gentle heat for about 15–20 minutes, or until it thickens and melts down completely.

Heat a big pot of salted water until it just starts bubbling. Gently add the gnocchi, and they're ready when they rise to the top after 2–3 minutes. Drain well.

Mix the drained gnocchi with the warm Gorgonzola sauce until everything's coated nicely. Dish it up and sprinkle some parsley on top before digging in.
