Mediterranean Chicken Skillet (Print)

One-pan ground chicken with Mediterranean flavors of olives, feta, and aromatic spices for a quick keto-friendly dinner.

# Ingredients:

01 - 1 tablespoon olive oil
02 - 1 pound ground chicken
03 - 1 small onion, finely chopped
04 - 1 clove garlic, minced
05 - 1 bell pepper, chopped (red or green)
06 - 1 teaspoon dried oregano
07 - 1 teaspoon smoked paprika
08 - 1 teaspoon ground cumin
09 - Salt and pepper to taste
10 - 1 cup cherry tomatoes, halved
11 - 1 cup pitted Kalamata olives, sliced
12 - 1 cup crumbled feta cheese
13 - 1 tablespoon fresh parsley, chopped
14 - Juice of half a lemon

# Directions:

01 - Heat the olive oil in a large skillet over medium heat. Add the ground chicken and cook until browned, breaking it apart with a spoon, about 6-8 minutes.
02 - Add the chopped onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 2-3 minutes.
03 - Stir in the bell pepper, oregano, smoked paprika, cumin, salt, and pepper. Cook for another 3-4 minutes until the bell pepper softens slightly.
04 - Add the cherry tomatoes and olives to the skillet. Mix well and allow the tomatoes to cook down for about 5 minutes.
05 - Sprinkle the crumbled feta cheese over the mixture and let it melt slightly into the skillet.
06 - Remove from heat and stir in the fresh parsley and lemon juice.
07 - Taste and adjust seasoning if necessary. Serve warm.
