Sweet peaches and cherries meet tangy lime for a fresh, vibrant salsa experience.

# Ingredients:

01 - Juice of 1 1/2 limes plus zest from 1 lime
02 - 1 cup cherries, halved and pitted
03 - Salt, to taste
04 - 1 large handful of fresh cilantro, finely chopped
05 - 2 garlic cloves, minced
06 - 2 peaches, diced into 1/2-inch pieces
07 - 1 jalapeño pepper, seeds removed and finely chopped
08 - 1/2 small red onion, finely diced

# Directions:

01 - Mince the garlic cloves and set aside.
02 - Dice the peaches into 1/2-inch pieces and place in a large mixing bowl.
03 - Halve and pit the cherries, then add them to the bowl with the peaches.
04 - Finely chop the cilantro and set aside.
05 - Remove the seeds from the jalapeño pepper and chop it finely.
06 - Add the minced garlic, chopped cilantro, jalapeño, and diced red onion to the bowl with the peaches and cherries.
07 - Pour in the lime juice and sprinkle the lime zest over the mixture.
08 - Add salt to taste, starting with a pinch and adjusting as needed.
09 - Gently fold everything together with a spoon or spatula, being careful not to crush the fruit pieces.
10 - Transfer the salsa to the refrigerator for at least 15 minutes to allow the flavors to meld together and the salsa to chill.
11 - Stir gently before serving to redistribute the juices. Taste and adjust the seasoning if needed.

# Notes:

01 - Resting the salsa in the refrigerator allows the lime juice to marinate the fruit and herbs for a cohesive flavor.
