Preheat oven to 350°F (175°C) and lightly grease a mini muffin tray.

Place approximately 2 tablespoons of shredded mozzarella into each muffin cavity. Top with 3-4 pepperoni slices, then sprinkle with Italian seasoning.

Bake for 7-8 minutes until golden brown. Allow to cool for 5 minutes before removing from the tray.
