Wash and scrub the sweet potatoes. Cut them into 1-inch cubes, leaving the skin on if desired.

In a mixing bowl, toss the sweet potatoes with olive oil, salt, cinnamon, and brown sugar until well coated.

Line a baking sheet with parchment paper. Spread the seasoned sweet potatoes out in a single layer.

Roast in a preheated oven at 425°F (220°C) for 25–30 minutes, flipping halfway through.
