Smashed Cucumber with Feta (Print)

Fresh smashed cucumbers with creamy avocado, feta cheese and herbs in a tangy honey-mustard dressing. Ready in 10 minutes!

# Ingredients:

→ For the cucumber salad

01 - 4 Persian cucumbers or 1 English cucumber
02 - 1 medium ripe avocado
03 - 60g crumbled feta cheese
04 - 60g chopped pistachios
05 - 60g chopped fresh dill
06 - 60g chopped fresh chives

→ For the dressing

07 - 30-45ml extra virgin olive oil
08 - 15ml lemon juice
09 - 15ml Dijon mustard
10 - 10ml honey
11 - 2 cloves garlic, peeled and minced
12 - Salt and pepper to taste

# Directions:

01 - Wash and dry the cucumbers thoroughly, then chop each one in half. Place each half of the cucumber onto a cutting board and use the flat side of your knife and your hand to smash each piece. Chop them into 2.5cm pieces and transfer to a medium-sized bowl. For larger cucumbers, cut each one in half horizontally then vertically before smashing for easier handling.
02 - Peel the avocado, chop it, and add it to the bowl with the cucumbers. Add the crumbled feta, chopped pistachios, dill, and chives to the same bowl.
03 - Combine all dressing ingredients in a glass jar or bowl and whisk thoroughly to emulsify.
04 - Pour the dressing over the salad and toss gently to combine. Garnish with additional fresh herbs if desired before serving.

# Notes:

01 - Dry the cucumbers thoroughly as they contain significant moisture. You can remove seeds with a spoon to reduce water content in the salad.
02 - While smashing the cucumbers is optional, it's highly recommended for optimal flavor development and texture.
03 - Leftovers can be stored in an airtight container in the refrigerator for 3-5 days. Before serving again, stir well and add a squeeze of fresh lemon juice to brighten the flavors.
