Stuffed Chicken with Mediterranean Flavors (Print)

Tender chicken breasts filled with a savory mixture of roasted peppers, spinach and cheese, then baked until golden and juicy.

# Ingredients:

→ Chicken

01 - 4 boneless chicken breasts

→ Seasoning Mixture

02 - 2 tablespoons olive oil
03 - 1 teaspoon garlic powder
04 - 1 teaspoon onion powder
05 - 1 teaspoon dried oregano
06 - 1 teaspoon paprika
07 - Salt and pepper to taste

→ Filling

08 - 1 cup fresh spinach, chopped
09 - 1/2 cup roasted red peppers, diced
10 - 1 cup shredded mozzarella cheese
11 - 2 cloves garlic, minced
12 - 1/4 cup grated Parmesan cheese
13 - Salt and pepper to taste

# Directions:

01 - Preheat the oven to 190°C (375°F).
02 - In a small bowl, combine olive oil, garlic powder, onion powder, dried oregano, paprika, salt, and pepper to create the seasoning mixture.
03 - Cut a horizontal slit through the thickest part of each chicken breast, being careful not to cut all the way through. Open each breast like a book.
04 - Thoroughly rub the seasoning mixture over all surfaces of the chicken breasts.
05 - In a medium bowl, mix chopped spinach, diced roasted red peppers, shredded mozzarella, minced garlic, grated Parmesan, salt, and pepper until well combined.
06 - Distribute the filling mixture evenly among the butterflied chicken breasts, then fold each breast over to enclose the filling.
07 - Transfer the stuffed chicken breasts to a baking dish. If necessary, secure with toothpicks to prevent filling from escaping.
08 - Bake in the preheated oven for 25-30 minutes, until chicken is thoroughly cooked and internal temperature reaches 74°C (165°F).
09 - For a golden brown finish, broil for an additional 2-3 minutes.
10 - Remove toothpicks before serving hot.

01 - For the best flavor, allow the stuffed chicken to rest for 5 minutes after cooking before serving.
