Stained Glass Window Cookies (Print Version)

# Ingredients:

→ Cookie Base

01 - 2 1/4 cups (281g) all-purpose flour, plus extra for rolling
02 - 1/2 teaspoon baking powder
03 - 1/4 teaspoon salt
04 - 3/4 cup (170g) unsalted butter, softened
05 - 3/4 cup (150g) granulated sugar
06 - 1 large egg, room temperature
07 - 2 teaspoons pure vanilla extract

08 - 15-20 unwrapped hard candies (Jolly Ranchers or Life Savers)

→ Optional Topping

09 - 1 large egg white or 2 tablespoons water
10 - 1/3 cup (65g) coarse sugar or sprinkles

# Instructions:

01 - Whisk together flour, baking powder, and salt in a medium bowl and set aside.
02 - Beat butter and sugar until creamy, add egg and vanilla. Mix in dry ingredients until combined. If dough is too sticky, add 1 tablespoon flour.
03 - Divide dough in half, roll each portion to 1/4-inch thickness between parchment paper. Stack and refrigerate for 1-2 hours.
04 - Separate hard candies by color and crush into small pieces using a rolling pin. Set aside.
05 - Cut cookies with large cutter, then make center holes with smaller cutter. Fill holes 3/4 full with crushed candies.
06 - Bake at 350°F for 12-13 minutes until candies melt and cookies are lightly browned. Cool completely before handling.
