Two-ingredient Banana Pancakes (Print Version)

01 - 1 medium ripe banana
02 - 2 large eggs

03 - Butter or oil for the pan

# Instructions:

01 - In a medium bowl, mash the banana until smooth with no large chunks remaining.
02 - Add eggs to the mashed banana and whisk until well combined. The batter should be loose and liquidy.
03 - Heat a nonstick pan over medium heat until a water drop sizzles. Add a small amount of butter or oil.
04 - Drop about 2 tablespoons of batter per pancake into the pan. Cook until golden brown on bottom, about 1 minute.
05 - Carefully flip each pancake and cook another 1-2 minutes until golden brown on both sides.

# Notes:

01 - Can be made in a food processor for extra-smooth batter
02 - Leftovers can be stored in the fridge or frozen between parchment paper
03 - Best reheated in a toaster for crispy edges
