Walking Taco Casserole (Print Version)

# Ingredients:

01 - 2 tablespoons canola oil.
02 - 1 white onion, diced.
03 - 4 cloves garlic, finely minced.
04 - 1 pound 80/20 ground beef.
05 - 3 tablespoons taco seasoning.
06 - 1 scallion, finely diced.
07 - 1 can (15 oz) pinto beans.
08 - 1 can (10 oz) diced tomatoes with green chilies.
09 - 1 cup thick salsa.
10 - 1½ cups cheddar cheese.
11 - 9 oz bag Fritos corn chips.
12 - Salt and pepper to taste.
13 - Optional toppings: sour cream, jalapeños, scallions, lettuce.

# Instructions:

01 - Heat oil and cook onion and garlic for 6-8 minutes until soft.
02 - Add beef, break into pieces, and cook 6-8 minutes until browned.
03 - Stir in taco seasoning, scallions, and beans. Cook 1-2 minutes.
04 - Add tomatoes and salsa. Simmer 8-10 minutes until well seasoned.
05 - Transfer to 9x13 dish. Top with cheese and chips. Bake at 350°F for 10 minutes.
06 - Add optional toppings and serve hot.

# Notes:

01 - Add salt if taco seasoning is unsalted.
02 - Chips can be added to taste.
03 - Customize with favorite taco toppings.
