Zucchini Parmesan Cheese Bake (Print Version)

# Ingredients:

01 - 3 large eggs
02 - 1 cup grated Parmesan cheese
03 - 1/2 cup canola oil
04 - 1 tablespoon minced fresh parsley
05 - 1 minced garlic clove
06 - 1/4 teaspoon salt
07 - 1/8 teaspoon pepper
08 - 3 cups sliced zucchini
09 - 1 cup biscuit or baking mix
10 - 1 small onion, chopped

# Instructions:

01 - In a large bowl, whisk together the eggs, Parmesan cheese, canola oil, parsley, garlic, salt, and pepper.
02 - Stir the zucchini, baking mix, and chopped onion into the egg mixture until evenly combined.
03 - Pour the mixture into a greased 9-inch deep-dish pie plate. Bake at 175°C (350°F) for 25 to 35 minutes, or until golden and set in the center.
