This Fajita Chicken Casserole transforms your favorite Tex-Mex flavors into a comforting one-dish meal that brings the sizzle of restaurant fajitas to your dinner table with minimal effort. The combination of tender chicken, fluffy rice, and melty cheese creates a hearty dinner that satisfies the whole family while delivering that distinctive fajita flavor everyone loves.

I developed this recipe during a particularly hectic sports season when our family needed hearty meals that could be prepped ahead. What started as a desperate dinner solution has become our most requested weeknight meal, especially on cold evenings when we crave something both comforting and flavorful.

  • Shredded cooked chicken provides the protein foundation and absorbs all those delicious fajita flavors. I recommend using rotisserie chicken for the most tender results and easiest prep.
  • Instant rice cuts down cooking time significantly while still absorbing all the savory flavors in the casserole. The texture stays perfect in this application.
  • Cream of chicken soup creates a rich creamy binding that holds everything together. Look for the low-sodium version if watching salt intake.
  • Sour cream adds tanginess and creates that distinctive creamy fajita finish. Full-fat works best for texture but light can work in a pinch.
  • Frozen onion and bell pepper blend saves tremendous prep time while still delivering fresh flavor. The vegetables release moisture as they cook helping to create the perfect sauce consistency.
  • Diced tomatoes with chilies brings acidity brightness and a touch of heat. The undrained tomatoes provide essential moisture for cooking the rice properly.
  • Chicken broth ensures the rice cooks perfectly while adding depth of flavor. I prefer using low-sodium varieties to control the overall salt level.
  • Fajita seasoning delivers that authentic fajita flavor profile without measuring multiple spices. Look for varieties with minimal additives for best results.
  • Mexican blend cheese creates that essential gooey cheesy top layer that makes this casserole irresistible. Freshly shredded melts better than pre-packaged if you have time.

How To Make Fajita Chicken Casserole

Preparation
First get your oven preheating to 350°F which ensures the casserole cooks evenly from the start. While it preheats prepare your 9x13 baking dish with a light coating of cooking spray to prevent sticking especially around the edges where cheese can become difficult to remove later.
Create the mixture
In a large bowl combine all ingredients except for half the cheese which youll reserve for topping. Start with the chicken as your base then add the uncooked rice cream of chicken soup and sour cream. The creamy ingredients should be mixed thoroughly first to eliminate any lumps before adding the vegetables and liquids. When adding the seasonings sprinkle them evenly throughout the mixture rather than dumping in one spot to ensure even flavor distribution.
Layer and bake
Transfer your mixture into the prepared baking dish using a rubber spatula to spread it into an even layer making sure the rice is distributed uniformly to ensure even cooking. The initial 25minute bake allows the rice to absorb the liquid and begin cooking while flavors meld together. The mixture will bubble slightly at the edges when ready for the cheese topping.
Cheese topping and final bake
Add the remaining cheese in an even layer across the entire surface of the casserole. This creates that irresistible golden cheesy crust that makes everyone eager to dig in. The final 510 minutes of baking melts the cheese perfectly while completing the cooking process for the rice. Look for bubbling around the edges and a slight golden color on the cheese.
Rest before serving
Allow the casserole to rest for about 5 minutes before serving. This resting period allows the casserole to set up slightly making it easier to portion while ensuring the rice completes its final absorption of flavors. The casserole should be hot but not scalding when served.

My absolute favorite aspect of this recipe is how it transforms basic ingredients into something that tastes special enough for company. The frozen pepper and onion mix is my secret timesaving ingredient here I always keep several bags in my freezer specifically for this dish. The first time I served this to my motherinlaw she asked for the recipe thinking it was a complicated family heirloom dish which still makes me smile.

Storage and Reheating

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors actually improve overnight as the seasonings have more time to meld together. When reheating cover with foil and warm in a 325°F oven until heated through about 2025 minutes. For microwave reheating cover loosely and heat on medium power with a sprinkle of water to maintain moisture.

Smart Substitutions

This casserole welcomes adaptations based on what you have on hand. No instant rice? Long grain white rice works with an additional ¼ cup of broth and 10 more minutes of cooking time. For a lighter version try Greek yogurt instead of sour cream. Vegetarians can substitute black beans and corn for the chicken and vegetable broth for chicken broth. The beauty of this recipe is its flexibility while maintaining that distinctive fajita flavor profile.

Serving Suggestions

This casserole stands beautifully on its own but becomes a feast when paired with simple sides. A crisp green salad with cilantro lime dressing makes the perfect counterpoint to the rich casserole. For authentic presentation serve with warmed tortillas fresh avocado slices and lime wedges allowing everyone to build their own fajita bowls or wraps. A dollop of fresh guacamole or pico de gallo adds brightness that complements the savory flavors of the dish.
