Let's Bake Together

Sweet Syrup Start
Pour equal parts sugar and water in a pan. Let it simmer until the sugar melts then add your rum. Set it aside to cool while you work on the rest.
Make The Almond Magic
Mix your almond flour and sugar first. Beat in soft butter then eggs and vanilla until it looks smooth and creamy. This is your frangipane and it's going to make everything delicious.
Fill Those Croissants
Slice each croissant in half like a sandwich. Brush both sides with your rum syrup. Spread that lovely almond cream inside and on top. Don't be shy with it.
Time To Transform
Pop them in your oven at 375°F. They'll need about 15 minutes until they're golden and crispy on top but still soft inside.
The Final Touch
While they're still warm dust them with powdered sugar. Watch it melt slightly into the warm tops pure heaven.

Plan Ahead Tips

Make your syrup and almond cream whenever you have time. The syrup keeps for a month in the fridge and the cream stays good for a week. Just let the cream warm up a bit before you use it.
